1. Begin by rinsing the dried hominy under cold water until the water runs clear. This process can take several minutes, as the hominy can be quite dusty.
2. In a large pot, bring 6 quarts of water to a boil. Add the hominy and cook for about 45 minutes to an hour, or until the hominy is tender. Stir occasionally to prevent sticking.
3. While the hominy is cooking, prepare the chicken. In a separate pot, bring 4 quarts of water to a boil. Add the whole chicken or chicken parts, onion, garlic, cumin, oregano, chili powder, salt, and bay leaves. Cook for about 45 minutes to an hour, or until the chicken is tender.
